- 1 large head cauliflower
- 2 Tbs Curry Blend
- 1 cup plain Greek yogurt
- 1 tsp kosher salt
- 2 Tbs olive oil
- Chopped fresh cilantro for garnish
- 1 lime of Juice
Clean the head of cauliflower and discard any outer leaves.
Cut it into slices about 1 inch thick.
In a large mixing bowl, combine the yogurt with the curry powder, lime juice and salt.
Put the cauliflower into the bowl and mix the yogurt mixture all over the cauliflower pieces and refrigerate for at least an hour.
preheat the oven to 375 degrees, drizzle the oil over the foil and lay all the yogurt covered cauliflower pieces on the prepared baking sheet.
Roast for 30 to 35 minutes, until the cauliflower is tender and golden.
