Baigan Achar Odia Style Cooking Method :

Cut brinjal round and midium thick and add salt as taste
Fry the brinjal and take it another pan
Hit the pan add mustard oil and dry chilly
Add chopped onion, chopped garlic and saute
Add haldi powder, mirchi power and saute for 2 minutes
Add fried Brinjal and soute continuesly
Add 1 cup Tamarind (tentuli) with half cup water
Add sugar as taste and saute
Atlast add futana and saute for 5 minutes
Now brinjal Achar ready to serve
